Avocado Deviled Eggs — A Healthy Appetizer for Your Next Gathering

When my hens are being especially productive, we make deviled eggs frequently. While most of the people in my household will do their best to avoid a simple hard-boiled egg, they like them with a little bit of added flavor.

How to make deviled eggs with avo

Eggs may be the perfect food, don’t you think? When your hens (or your neighbors hens!) are laying prolifically, it’s time to whip up a batch of these little snacks.

These avocado deviled eggs give us a chance to use an abundance of eggs plus the overflow of avocados we are often blessed with. (If you, too, find yourself with more avocados you can use at once, here’s how to freeze avocados for later use.)

If we’re making them here, just for us? I simply use a spoon to put the filling inside the egg halves. They’re prettier, though, if you use a cake decorating bag. I prefer a reusable one, rather than the disposable kinds. Using avocado instead of mayonnaise makes these a suitable Whole30 egg recipe and a lectin-free option as well, as long as your eggs are sourced from soy-and corn-free chickens.

For the best results, choose a nice, ripe avocado to make this recipe. It will smash up more easily than a firm avo. Alternatively, you can use frozen avocados if you’ve tucked some away. Just allow them to thaw completely before combining them with the hard-boiled egg yolks.

Avocado Deviled Eggs

Ingredients

Instructions

  1. Peel hard boiled eggs. Slice in half lengthwise and gently remove the egg yolk to a medium sized mixing bowl. Set egg whites on a plate.
  2. Add avocado to bowl. Mash yolks and avocado together. 
  3. Squeeze the juice from the lemon wedge into the bowl. Be sure to avoid seeds. 
  4. Add mustard, salt, and pepper. Mash thoroughly to ensure that the mixture is smooth.
  5. Use a cake decorating bag or a small spoon to fill the hole of each egg half. Sprinkle with paprika and serve immediately.

Notes

These avocado deviled eggs are the perfect addition to a brunch buffet! Store in the refrigerator if you won't be serving them right away.

    I made these to try and I didn’t make enough cause they are gone. I added a little more mustard, some lemon pepper, some pickled relish and topped them off with bacon crumbles. Oan, the extra I had left over goes great with tortilla chips.

    I added a dash of hot sauce to give them a little extra zip. Like these so much better than using mayo!

    I made ahead, went to serve and they were brown and funny tasting. Second, time made eggs, peeled, sliced and put all ingredients except lemon juice and waited on prepping avocado until 5 min b4 serving. They were perfect. Thanks

    I understand serve immediately now. They were delicious from the time I mixed everything, not later though. The avocado started going bad within hours. Eat right away and then throw away.
