This tomato tart makes a delicious appetizer or lunch, or serve it as a side dish for dinner. No matter when you nosh on it, it will make you happy.
Ingredients
Crust — This is kind of an open ended option. You can use my grandma’s pie crust recipe. You can use a pre-made pie crust. Or you can use frozen puff pastry.
Tomatoes — Ripe heirloom tomatoes are the star of this tart. They’re delicious, but using an assortment of colors makes it a beautiful dish, too. Cherry tomatoes are excellent, but you could also use thick tomato slices from beefsteak type tomatoes. As long as the tomatoes are fresh from the vine, it will be delicious! You’ll also add some sun dried tomatoes; these provide a little chewiness.

Goat cheese — The rich tanginess of goat cheese pairs deliciously with the tomatoes. No access to goat cheese? Try cream cheese or ricotta cheese and you won’t be disappointed.
Parmesan cheese — Top the tart with Parmesan cheese for a burst of flavor.
Seasonings — Dried Italian seasoning, chopped fresh basil, and a drizzle of honey round out the flavor for this delicious heirloom tomato tart.
Note that if you opt to make Grandma’s pie crust, it makes two crusts, so you can use one here and freeze half for later. (Or maybe you already have one frozen, from when you made this mushroom and onion tart?)
Making this tomato goat cheese tart
Start by lining a tart pan or pie pan with the dough. Docking the crust with a fork will prevent it from getting air bubbles while it cooks.
This tart is really easy to assemble. With the crust in the tart pan, you’ll spread the crust with goat cheese, then top with the tomatoes. Sprinkle with Parmesan cheese and bake. So easy!

Heirloom Tomato Tart Recipe with Goat Cheese
This heirloom tomato tart recipe starts with a single pie crust topped with a medley of tomatoes.
Ingredients
- 1 pie crust (or alternative, see notes)
- 4 oz goat cheese, or cream cheese, softened
- 12 oz tri color cherry tomatoes, halved
- ¼ teaspoon balsamic vinegar
- 1 teaspoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- ½ cup sun dried tomatoes, chopped
- ½ cup shredded parmesan cheese
- 1-2 tablespoons basil leaves, roughly chopped
- 1 tablespoon honey
Instructions
- Preheat oven to 425º fahrenheit.
- In a large bowl, coat fresh tomatoes with balsamic vinegar, olive oil, Italian seasoning, and salt and pepper. Toss together.
- Roll out pie crust and transfer to tart pan. (A pie pan will also work.)
- Score pie crust with a fork.
- Gently spread goat cheese (or cream cheese) over the pie crust.
- Top with fresh tomatoes; sprinkle sun dried tomatoes over these. Add shredded cheese.
- Bake for 18-20 minutes, or until pie crust cooks through.
- Remove from oven, drizzle honey over the tomatoes and garnish with basil leaves.
