  • 1/4 cup peanut butter
  • 1/2 cup honey
  • 1 tsp. vanilla extract
  • 2 large eggs, lightly beaten
  • 1/4 tsp, sea salt
  • 1/2 cup whole wheat flour (or oat flour for gluten free)
  • 1/2 tsp. baking powder
  • 4 cups old-fashioned rolled oats
  • 1 cup organic raisins or cranberries
  • 1 cup semisweet chocolate chips (optional)
  • 1 cup nuts (optional)

  1. Pre-heat oven to 350 degrees.
  2. Mix peanut butter, honey, vanilla, and eggs in a bowl. Stir in salt, flour, baking powder, and oats. Add raisins, chocolate chips, and nuts.
  3. Spread mixture into a greased 9"x 13" pan (or onto a jelly roll pan if you like your bars thinner).
  4. Place a piece of waxed paper or a silicone baking mat over the mixture, then press the mixture firmly down into the pan with your hands. Bake 15 minutes or until the top is golden brown. Cool, then slice into bars.

Recipe Notes

You can customize these to suit your fancy, though, by adding various nuts, dried fruits, or chocolate chips.
