The mustard in this vinaigrette recipe helps to emulsify the oil and vinegar and adds a touch of creaminess; you can leave it out for an even simpler vinaigrette.
Combine all ingredients in an airtight jar (an upcycled jar or mason jar both work), and shake until combined. Alternatively, you can whisk together the ingredients in a bowl.
Store in the refrigerator for up to a week.
Notes
The best thing to remember here is that a vinaigrette is endlessly versatile. While this is an apple cider vinegar dressing, you can change up the type of vinegar you use for a different flavor (see notes above).
Variations:
Lemon Vinaigrette: Substitute fresh lemon juice for half of the vinegar. Add a bit of chopped ginger, too, if you like.Garlic Vinaigrette: Add 1 crushed clove of garlic to the jar before shaking.Blue Cheese Vinaigrette: Shake ingredients as instructed, then add 1/4 cup crumbled blue cheese.Fruity Vinaigrette: Reduce oil to 1/2 cup plus 2 tablespoons, and add 2 tablespoons jam or jelly to jar before shaking.
