Ingredients

peaches

Roma tomato

chopped cilantro

red onion

habanero pepper
seeds removed

teaspoon
lemon juice

teaspoon
salt

black pepper
Instructions
Cut the peaches, tomatoes, and onions into small cubes 1/4" to 1/2" across.

1 large Roma tomato,
¼ medium red onion
Chop the habanero pepper into very small pieces.
1 habanero pepper
In a large bowl, combine the peaches, chopped tomato, onion, habanero pepper, and cilantro.
Add the salt, pepper and lemon juice.
¼ cup chopped cilantro,
1 teaspoon lemon juice,
1 teaspoon salt,
½ teaspoon black pepper
Stir and refrigerate for a few hours before serving.
Serve with your favorite tortilla chips.
Notes
Instead of a knife, you may opt to use a food processor to chop the vegetables.
To prevent burning your skin, you may wish to use kitchen gloves to protect yourself while chopping the hot pepper.
