  1. Preheat the oven to 400 degrees and grease or line a 12-cup muffin tin.
  2. Combine the flours, sugar, psyllium, baking powder, cinnamon, baking soda, and salt in a medium-sized mixing bowl. Whisk together until all of the ingredients are thoroughly mixed together.
  3. In a separate small bowl, beat the eggs and then mix in the milk, melted fat, and vanilla extract.
  4. Add the wet ingredients to the dry and combine gently until nearly homogenous. Fold in the apples and make sure all ingredients are well combined.
  5. Divide the batter between the 12 muffin cups and place the muffin tin into the hot oven. Bake for 18-20 minutes or until a cake tester comes out clean.
  6. Remove muffins and place on a cooling rack. Allow to cool completely before eating.
