Radish Leaf Salad Dressing

Sure, chickens love radish leaves, but it’s a shame to let the chickens have all the fun. I harvested a bunch of radishes from the garden earlier today and saved some of the greens to try this. Consensus? Pretty tasty!

Creamy Radish Leaf Salad Dressing

  • Greens from one bunch of radishes (about 1 cup)
  • 1 clove garlic
  • 3/4 cup sour cream
  • 1/8 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Whir all ingredients together in a blender until smooth. Serve with salad or as a veggie dip.

If you’ve got radishes aplenty, you might also want to try making radish leaf pesto.

    Kris, this sounds delicious and is a thrifty way to use up something that would normally be thrown away (although i would hope it would be put in a compost bin instead of just thrown away!)  
     
    Something else I have used as a salad dressing is leftover dressed salad.  If you have salad that has been dressed and it wasn’t eaten during the meal, put the leftovers in the blender, dressing and all…add a bit more dressing or vinegar and oil and give it a whirl in the blender and use over your next salad.  
     
    Leftover salads that are not dressed can be added to soups, stews, stir fries  and when making homemade broths or stocks.

    •  @SoniaR Wow, what a totally awesome idea! I think someone should open a restaurant called SALAD, where they serve salad in many forms (including in omelets). And salad ice cream. And salad dressing made from salad, like you suggest here!
