Fresh & Easy Strawberry Salsa

When strawberries are in season, there are plenty of ways to enjoy them. Fresh out of the garden is my favorite, but transforming them into salsa is a delicious way to enjoy them, too. A little sweet, a little savory, this dish requires only some simple ingredients and a little chopping.

Ingredients

Strawberries — Fresh, juicy strawberries are the only way to go here. Strawberries are consistently listed on the Dirty Dozen list put out by the Environmental Working Group, so if you don’t grow your own, opt for organic berries.

Red onion — The sweetness of red onion pairs well with the berries, but really, you can use any kind of bulb onion you have on hand — white, yellow, or red.

Jalapeño pepper — Here’s where the heat comes in. Finely dice the jalapeño pepper to add some kick to the salsa. Don’t like the heat? Skip this ingredient or use one of the fun “coolapeño” varieties that are new on the market. These offer the flavor without the heat.

Cilantro Yeah, this one’s optional. Those of you who think this fresh herb tastes like soap should skip it. The rest of us, though? Mmm.

Lime — The bright flavor of lime juice makes the ingredients in this salsa shine. No lime? Give lemon a try.

Making this Fresh Fruit Salsa

I love easy. And this recipe is EASY. Chop up a handful of ingredients, mix them together and serve up some early summertime flavor.

The strawberries should be chopped by hand rather than in a food processor unless you like a more pureed salsa. If that’s easier for you, the flavor will be just as good, but the texture will be different. This is a case of “you do you.” I like to aim for a 1/4″ to 1/2″ dice on the berries.

Chop the red onion half the size of the strawberries and finely dice the jalapeño pepper.

You’ll use the zest of the lime as well as the juice. Go here for more on how to zest citrus.

Serving Ideas

Obviously, this sweet and savory salsa is delicious served with chips at a summertime barbecue. But it’s also a great accompaniment to grilled chicken or fish. For an appetizer with some oomph, serve this alongside goat cheese and crunchy crackers.
